Family faves {Chimichangas}

The whole quote is here if you don't remember it.  Still makes me giggle!  Hubs agreed.  It was quite worth it!
A while back I asked for some suggestions for some new meals for the family over on the Ordinary Miracles Facebook page.  Y'all came through!  Y'all rock by the way!  This one has been bookmarked for a while now and I finally got around to making it when I found myself with a whole bunch of extra chicken.
And let me say... YUM!  This one is definitely going in the rotation!  There wasn't a person in the house that didn't luv them and seeing as how there are 9 of us, with 9 different opinions, that's a very rare thing indeed!

I made the filling much earlier in the day and that made the remainder of the prep pretty easy and quick at dinner time.  I made 24 chimis and served with some rice, a whole one was more than enough for a meal.  My favorite part is that the extra burritos/chimichangas freeze beautifully!  Needless to say there were many frozen for many meals in the future!   Then anyone can pop one in to the microwave for a quick to-go meal or hearty snack.

The original recipe is here.  Of course, because I can't leave well enough alone, I tweaked the ingredients and added rice to stretch it even further.
Easy Peasy Family Chimichangas

1 lg can of re-fried beans
1 pkg of taco seasoning mix
1 can of green chili
2 c of cooked shredded chicken or ground beef (if using ground beef, fry it with the taco seasoning packet)
8-12 oz salsa
1 t cumin (optional)
1 can of black beans (optional)
1 can of corn (optional)
juice from one lime (optional but I highly recommend it!)
24 10-12" flour tortillas
2 c of grated cheese
bacon drippings

Combine all ingredients (except sour cream and bacon drippings) and warm on stove until warmed through.  Place 1/4 cup of mixture in tortilla, top with some cheese, and roll up folding ends in like a burrito.  Place seam side down on a cookie sheet.  Brush all burritos with bacon drippings and bake in 350 degree oven for 15-20 minutes.  Towards the end of the cook time, turn to broil and flip burritos till light brown and crisp on both sides.  Be sure not to burn when you're telling 14-year-old man child that hair cuts are tomorrow and could he please put a shirt on while walking around the house.  Cool on wire racks. Serve with a dollop of sour cream

  2. PS WITHOUT THE BEANS!!!That would just be so unfair to co-workers, classmates and anybody withing 20feet of our person.
