This is Sunny's creation from combining a couple different recipes than omitting ingredients we didn't have on hand. She came up with this last year, and it's been a hit ever since. When I asked Sunny for her recipe she decided to name it "Sunny's wingin' it bruschetta" 'cause she actually never measures the ingredients. She just wings it. This recipe is SO wonderful for summer and easy and fast too. I like it with a little red onion too. It's great for get togethers. I guess you could just as easily make it in the oven too. So here it goes.
- Several tomatoes-chopped
- Prosciutto-cut up
- Mozzarella-grated or small diced
- Olive oil
- Fresh basil, stems removed, chopped
- Salt/Pepper-to taste
- Baguette of French bread
Put all ingredients except bread in a bowl and drizzle with a bit of olive oil. Mix it together. Salt & pepper to taste.
Slice French bread into 1" slices and brush both sides with olive oil. Toast bread on the grill till there are golden grill marks on the bottom. Flip the bread over and spoon the bruschetta mixture on top. Cover the grill and wait until cheese starts to melt. But be careful to have low heat, moving bruschetta to the top shelf of the barbecue if needed so as to toast but not burn the bottom side of the bread.
Forgo pride and go hide in a closet or lock yourself in the bathroom and eat one while they're still warm. You may miss out otherwise.
